WATERMELON PUNCH
Twenty 6-ounce servings

Prepare:

  • Simple Syrup, using 1 cup sugar and 1 cup water

Let cool. Trim the rind from:

  • 4 pounds watermelon

Cut into cubes, removing any seeds (you should have 5 to 6 cups). Working in batches, puree in a blender with the simple syrup, then strain through a medium sieve into a punch bowl. Stir in:

  • 1 ¼ cups lemon juice

Just before serving, stir in:

  • 1 liter ginger ale, chilled
  • 1 liter club soda or sparkling water, chilled
  • 1 quart strawberries, hulled and sliced, or melon balls
