This lightly sweet and tart beverage is like a healthy sports drink, perfect for sipping while working or playing outside on a hot day.

Combine in a medium saucepan:

  • 2 cups water
  • 2-inch piece ginger, thinly sliced

Bring to a boil. Remove from the heat, cover, and let sit for 20 minutes. Strain into a pitcher or quart jar and stir in:

  • ¼ cup honey or maple syrup
  • 2 tablespoons cider vinegar
  • ⅛ teaspoon salt

Stir until the honey or maple syrup and salt are dissolved. Stir in:

  • 2 cups ice cubes

Chill completely.
