“When out at sea, on look-out watch, / The hours pass slowly by, / But maybe someone brings to me / A mug of steaming kai.” This rich and delicious drink was a longtime staple of the British Royal Navy, meant to keep men on night duty nourished as well as wide awake. For those of us with more modest agendas, our version is a superb sustainer on a cold winter’s day.

Place in a medium saucepan:

  • 4 ounces unsweetened chocolate or dark chocolate (72% cacao or above) finely chopped
  • 1 ½ cups water

Heat, whisking frequently, until the chocolate is melted. Add:

  • One 14-ounce can sweetened condensed milk
  • (2 tablespoons malted milk powder or instant custard powder)

Whisk to combine and heat through. Remove from the heat. If desired, add:

  • (4 ounces rum or brewed coffee)
