SPICED HOT COCOA
4 servings

Stir together in a medium heavy saucepan:

  • 6 tablespoons unsweetened cocoa powder
  • 6 tablespoons sugar

Vigorously stir in, first by tablespoons and then in a slow, steady stream:

  • 3 cups milk

Heat over medium heat, stirring constantly and scraping the bottom of the pan, just until bubbles appear around the sides. Remove from the heat and stir in:

  • 2 cinnamon sticks, crushed
  • 6 whole cloves, crushed
  • 1 ½-inch piece ginger, peeled and sliced

Let stand, covered, for 30 minutes. Reheat until steaming, strain, and pour into mugs. If desired, top with:
